turkey, leek & mushroom frittata
You will need:
15 eggs, 1 package nitrite-free turkey (I like Sprouts), 1 cup chopped leek, 1 cup chopped mushroom, 1 TBSP grass-fed butter, 1/2 cup shredded parmesan cheese, S+P
Method:
Add butter to a large skillet (that can be placed in the oven, or wrap aluminum foil over handles) on medium-high heat. Add in leeks, cook until tender. Add in mushrooms & turkey. Scramble eggs and season with S+P. Pour over turkey & veggie mixture. Cook, scraping the sides and allowing raw egg to gather. Then, place in a 375 degree oven for 10 minutes. For the last 3-5 mintues add cheese, remove when melted and cooked through.
