Try this great dish for your Meatless Monday’s. It’s good for the body to have a break from meat, it’s good on the budget, and it’s good for the environment.

Salad Pizza

Yield 8 servings

Ingredients

  • 1 package of Bob's Red Mill pizza mix
  • 2 Tbsp EVOO
  • sea salt

Toppings

  • Hummus
  • Lettuce
  • Micro greens
  • Cucumber
  • Radish
  • Carrot
  • Hemp seeds
  • 1/3 cup kefit
  • 2 Tbsp pepercorn ranch

Instructions

  1. Drizzle pizza mix with EVOO and sea salt, bake at 425 for 20 minutes
  2. Top with hummus, lettuce, micro greens, cucumber, radish, carrot, hemp seed, kefir and peppercorn ranch

Add any additional toppings you would like!
