Giant Granola Breakfast Cookie

Are you sick of eggs for breakfast? This is a great way to mix up breakfast and have something sweet to start your morning. If you have busy mornings it takes only seconds to whip up and you can get stuff done while it freezes for an hour. Add any kind of fruit you have in your fridge, and whip up any toppings that you like to go with it.

Giant Granola Breakfast Cookie

Yield 6 servings

Ingredients

  • 3 Cups of your favorite, low sugar granola ( Almond Joy Granola works great)
  • 1 C Almond Butter
  • Sliced strawberries (optional)
  • Greek yogurt (optional)
  • Honey (optional)

Instructions

  1. Combine granola and almond butter, and press into a 9 inch round pan lined with parchment paper.
  2. Freeze for 1 hour.
  3. Top with plain Greek yogurt, sliced strawberries, and drizzle with raw honey.
