Patriotic Collagen Pops

These pops might look intricate, but they are super easy. I have been loving collagen in place of whey protein. Whey protein has it’s benefits. However, I find that when you do too much (and I believe many people do too much - people add protein to EVERYTHING) it impacts digestion and skin.

I will post more about my (hopefully previous) skin issues later - I was having major issues with it for a good 6-8 months. Post-nursing hormone regulation + self-care, cutting down on whey and using more collagen, and Beauty Counter have all combined to change my skin for the better. Fingers crossed. For now, lets talk collagen!

Collagen is found in animal protein, including humans! It is responsible for giving skin elasticity and gives hair, bones, and cartilage strength. With consistent use, collage can positively impact digestion, bone and joint health, and hormone balance.

There are several ways to add it in to your daily life: smoothies, yogurt, protein bites, and even a popsicle!

Patriotic Collagen Pops

Ingredients

Collagen Base:

1 can organic coconut milk

2 scoops Primal Kitchen Foods Vanilla Coconut Collagen

2 TBSP pure maple syrup

Raspberry Puree:

1 cup fresh raspberries

1/2 lemon juiced

1 TBSP pure maple syrup

1 TBSP water

Blueberry Puree:

1 cup fresh blueberries

1/2 lemon juiced

1 TBSP pure maple syrup

1 TBSP water

Instructions

Combine coconut milk, syrup, and protein in a glass, pour-able mixing bowl. Set aside. In your Blendtec, combine raspberries, lemon, syrup, and water. Blend well. Pour into a small Pyrex container. Set aside. In your Blendtec, combine blueberries, lemon, syrup, and water. Blend well. Pour into a small Pyrex container. Set aside. Layer blueberry puree, collagen mixture, then raspberry mixture until it fills to the top of a Popsicle mold. Freeze overnight. Makes 8 (depending on the size of the molds).
